- Make your sauce by mixing the tamarind paste, the sambal oeleck, the soy sauce and the sugar. Stir well and leave to one side.

- Prepare your noodles. I've used 2 sheets of Sharwoods medium egg noodles, which boil up in 4 minutes. You may wish to use Thai rice noodles for a more authentic dish.
- Gently fry the garlic, chilli and sauce in a wok.
- Whisk the egg and fry up with a little oil to quickly make some scrambled egg. Set aside.
- Add the cooked noodles to the wok, mix well with the sauce, then add the scrambled egg.
- Serve, and garnish with coriander, spring onion and a wedge of lime. Enjoy!
