Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. I plan to try freezing extra slices after they come out of the oven, but before mixing with anything for. Mix together the Parmesan, breadcrumbs and parsley and sprinkle over the top of the purée.
