The truly delicious turkey chili recipe is ready to serve in under an hour. Thanksgiving has come and gone, and now we have leftover turkey to gobble up. At the request of our amigos at Avocados from Mexico, we'd like to share a family favorite, mom's enchiladas verdes, (green enchiladas) again, yes they're that good, but instead of using chicken, why not use leftover shredded pavo (turkey) and add a side of sliced buttery, melt-in-your-mouth avocados.
Instructions to make Chili con Pavo (turkey):
- Brown turkey in a skillet, then transfer to a soup pot.
- Saute veggies then add to the soup pot.
- Drain kidney & pinto beans into a 2 cup measure. Add water to bring it to 2 cups. Add the liquid to the pot. Retain the beans.
- Add the spice and salt packets from the kit and the tomato sauce. For mild omit the cayenne pepper. Cover and simmer for 15 minutes. Only use the masa flour if the chili is too thin.
- During the last 5 minutes of cooking add tomatoes, retained pinto & kidney beans, rinsed black beans and the lime juice and zest to pot.
- When heated through, serve with tortilla chips or crackers.
