Instructions to make Peppermint cupcakes:
  1. Pre heat oven to 180 degrees
  2. Sieve self raising flour into a bowl and set aside.
  3. Mix sugar and margerine till light and fluffy. I used a hand mixer.
  4. Beat eggs in a separate bowl and add vanilla essence.
  5. Add the beaten eggs into the margerine and sugar mixture and mix thoroughly and add pepper mint essence.
  6. Take the sifted flour and mix with the wet ingredients in two batches interchanging with milk.
  7. Gently fold in the flour then pour into the lined cup cakes.
  8. Bake at 180 degrees for 25-30 minutes or until a skewer comes out clean when inserted.
  9. Remove from oven and let them cool for 15 minutes. Serve with you favorite beverage. Enjoy!
