These kachoris are hollow inside and crispy outside if it is made with perfection. My bhabhi makes awesome club kachori and when she prepares this for a big gathering, she first half-fries all kachoris one night before the. Club Kachori (Urad Dal Poori) is more like a Poori but made with plain flour and lentil instead of whole wheat flour. They are very small, crisp and are midly spiced.

Instructions to make Club Kachori:
  1. Drain the soaked urad, mong dal, and add green chilli grind coarsely in a grinder. In a mixing bowl, add the urad dal, mong dal paste, atta, oil, salt and using water as need, knead a firm dough. Cover it and keep aside.
  2. Pressure cook potato and pumpkins with salt and turmeric…upto 2 whistles. Now, heat oil in a pan, add panchphoran, hing, jeera, green chilli, ginger, garlic and sauté for a few seconds, add the potatoes and pumpkin (mashed pumpkin) with remaining boiled water, garam masala, amchur powder and mix. If needed add little more water, cover and bring to a boil. Add chopped coriander leaves and turn off the flame.
  3. Making Kachori, divide the dough into small balls, Roll them into thick rounds like puri. - Heat oil in a woke and deep fry all the kachories on high heat, till the crisp and golden brown.
  4. Take one kachori gently make a big hole in a centre and stuff potato pumpkin curry..garnish as u want and serve hot.

These kachories are served for breakfast and can be served during big gatherings. They also make a great Sunday brunch. Club kachori with aloo ki sabzi. Street food in Kolkata is to die for. We've all heard about the puchkas but these streets have taken a simple aloo puri to another level.
