Wagashi is characterized by its design, so in spring, when cherry blossom is in full bloom, the producers make wagashi in cherry blossom shapes, using cherry petals or leaves.

  1. Make ready 20 g Grated Yamaimo (Yam)
  2. Prepare 40 g Sugar
  3. Get 25 gJouyo-ko (fine rice flour)
  4. Take 75 g Koshi-an (Red beam jam)
  5. Prepare + Powder coffee & Food coloring

Instructions to make Hamster - Jouyo Manju (Wagashi):
  1. Ingredients for 5 pieces
  2. Add 40g of sugar into 20g of grated Yamaimo. Mix them well. Put the Yamaimo mixture into 27g of "jouyo-ko (rice flour)".
  3. Mix them. Put the rice flour onto the yamaimo mixture and fold it. Divide the dough into 5.
  4. Extend a dough into a circle as using dusting flour. Make the center thick. Wrap a bean jam ball with it. Make it egg shape. Do the same to make 5.
  5. Paint patterns of a hamster with powder coffee and a purple food coloring. Make its ears with a drinking straw. Put its eyes with mixture of a purple food coloring, coffee powder and rice flour dissolved in water. Do the same and make 5 hamsters.
  6. Put them in a steamer and spray water over them.
  7. Take them out and cool them with a cotton clothes cover not to get dry.

Manju is considered to be a variation of the Chinese manto. I made these Jouyo Manju with rice flour, Japanese yam, sugar, and red bean paste. Wagashi are traditional Japanese confections that are typically served with tea. They are mostly made from plant-based ingredients and take a lot of time and effort to make. They're often named after poetry, historical events or natural scenery, for example: Chrysanthemum on Mountain Path and Celebration.
