Prebaked pie crust is notoriously finicky. For dairy, I chose milk and almond milk (to see how a non-dairy milk would perform). For oil, I went with coconut oi l. For egg washes, I chose two: an egg and water mixture that Kitchn recommends in our basic pie crust (recipe link below) and an egg and salt mixture recommended by Fine Cooking.

Steps to make Milk pie with crust:
  1. For the pie crust: mix the flour and salt. Add the cold butter cut in small cubes and crumble it with your fingers (or a pastry cutter) until it resembles coarse meal. Add the cold water and mix just until the dough comes together. Wrap the dough and let it in the fridge for half an hour.
  2. Roll your dough with a rolling pin (I use a silicon mat to roll my dough on) until it’s big enough to cover the pan and the sides of the pan.
  3. For the filling: in a pot add all the ingredients except the eggs. Let it boil until you get a thick cream. You have to stir all the time. Let it cool a bit and add the eggs (already beaten). Mix well.
  4. Fill the pie crust with the cream. Bake (180C) for 40 min.
  5. Remove from the oven and spread the jam on top. Ready!

Gradually add the milk, tossing with a fork until a ball is formed. My Grandma Mary would always make me a milk pie if there was left over crust just for me. I could never find one as she would just pour the milk in the crust, sprinkle sugar and flour in, mix all the ingredients gently in the pie crust with a dainty thin "spatula" and then dot with butter and bake in her coal cookstove. This pie crust is very forgiving and easy to work with in that sense.
