  3. Mix the sugar and margarine together with a wooden spoon until light and fluffy

  5. Sift the flour into the mixture and fold in
  6. Divide the cake mixture evenly into the two sandwich tins and bake in the oven for 25 mins
  7. Leave to cool for a few mins then turn out onto a wire rack and leave to cool completely
  8. Whisk the cream with a little sugar
  9. Spread the jam onto one cake and cream on the other
  10. Carefully place one side on top of the other to create the sandwich
  11. Dust with a little icing sugar and tuck in!
