- Wash and soak rice for at least 3 hours before preparation.
- Heat oil and ghee.
- Fry cinnamon, cardamom, clove and bay leaves
- Fry onion till onion turns soft and almost turns brown
- Add ginger garlic paste and saute the onion a bit more for about 5 mins

- Add rice and let it cook at medium flame.
- Stir only once to mix ingredients. Ensure that you do not break down the rice.
- Add 2-3 spoons of ghee on top and cover the rice to slowly steam the rice, or as they say to give "dum" until the rice is cooked. Make sure that the rice does not get completely dry.
