  15. How to prepare enchiladas: - In a long or square casserole, put three to four tablespoons of sauce
  16. On working table keep one tortilla, put two tablespoon of mince mixture keep from one end to the other.
  17. Sprinkle grated cheddar cheese.
  18. And roll the tortilla like swissroll and keep on the casserole.
  19. Keep doing for all tortillas the same.
  20. Pour the extra sauce all over the rolls.
  21. Sprinkle generously grated cheddar and mozarella cheese
  22. Sprinkle chopped parsley and olive rings
  23. NB: baking can be done just before serving.
