- Prepare 1 lb ground beef
- Get 1 small onion
- Take 1 can enchilada sauce
- Prepare 10 each 10" flour tortilla
- Get 2 cup Cheddar cheese
- Take 1 can black olives
Steps to make Beef Enchiladas:
- Preheat oven to 350°. In medium skillet over med high heat, cook the beef and chopped onion until the beef is evenly browned and onion is tender.
- Pour 1/4 cup of enchilada sauce into the bottom of a 13x9 baking dish.
- On each flour tortilla place an equal portion of the ground beef mixture, drizzle with enchilada sauce and top with 1oz cheeze. Reserving at least a 1/2 cup of cheese. Tightly roll tortillas and place seam side down in pan.
- Pour the remaining sauce over the top of the enchiladas and sprinkle with the remaining cheese and sliced olives.
- Bake in preheated oven for 20 minutes, or until sauce is bubbly and cheese is thoroughly melted.
