I was craving this Indonesian Traditional Layer Cake some time ago and decided to make it myself. I used the recipe from an old cook book I bought in Indonesia many years ago.
Steps to make Layer Cake (Kue Lapis):
- Heat up coconut milk with pandan leaf and salt. Wait until bubbles appears. Set aside.
- In a bowl, mix coconut milk, sugar, and flour. Wisk throughly until incorporated and there is no lump.
- Divedid mixture into two parts. Add cocoa powder in one of mixture.
- Grease mold with oil. Prepare the steamer. Pour about 50 ml chocolate mixture, and steam for 5 minutes. Open the lid, and add white mixture on chocolate mixture. Steam for 5 minutes. Repeat until finish.
- Transfer the cake from steamer. Let it cool and slice it. Serve and enjoy !
This book is intended for beginners in the kitchen and the recipe for this Kue Lapis doesn't use rice flour but uses mungbean. When making Kue Lapis Legit, the difference of a minute can result in a burnt layer. Here are some tips on making lapis. I tried it today however the cake turns out a bit dry and the color is more brownish rather than a nice golden yellowish like. Leave Kuih Lapis to cool completely after steamed and invert the cake pan to knock out the kuih.
