  2. Gently stir in the Zest and Juice, adding Food Colouring and Flavouring if required. Mix until smooth.
  3. Put heaped tablespoon of mix into 2 x 12 trays with individual cake cases. Cook in a Medium Hot oven(Gas Mark 6), for 10 minutes, swop trays, (don’t slam the door!), then cook for a further 10 minutes until golden brown and cooked through, (check with a cocktail stick, should come out clean.)
  4. Cool on a rack until cold, then top with buttercream, Icing or any other topping you wish!! Enjoy!
