Instructions to make Meatloaf:
-
- Start off by chopping and dicing the celery, onion and carrots and putting them into a frying pan
-
- For the glaze, get a saucepan and put 1/2 a cup of tomato sauce along with the white wine vinegar, the sugar, 1tbsp of mustard and finally 1tbsp of garlic powder.
-
- Now take the pans to the hob and put a medium heat for both, you want to lightly fry the vegetables and mix together the glaze and bring to a light simmer. Once the vegetables have softened and onions have gone translucent take off the heat to cool down. When the glaze has started lightly bubbling take that off the heat also to let cool down.
-
- While the veg is cooling down we can work on the meat. Start off by dicing half the bacon and putting it into a bowl along with the minced pork and minced beef then get your hands in there to combine it all together.
-
- Now the meats all together add the breadcrumbs, double cream, 1tbsp garlic powder, the salt, the pepper, 2tbsp mustard, an egg, and the cooled vegetables once they've stopped steaming then knead all that goodness in until fully combined.
-
- At this point, you want to preheat your oven to 200 and get a lined baking tray and your cooled down glaze. Also, get some oil, any oil will do and lightly oil the baking tray spreading it with your hands, then plop the meat onto the tray and shape into a loaf.
-
- Get the rest of the bacon and wrap your loaf with it this will seal in some of the juices? Now pour half the glaze onto the loaf and spread it out covering the loaf and put into the oven for 50 minutes, glazing again halfway through at 25 minutes.
-
- Take the loaf out of the oven and let it cool down for a few minutes then slice and serve up!
