This is a delicious savoury pie that really makes the most of the winning partnership between egg and pork. I love the way the whole eggs are hidden beneath the crust - if you get one when you cut into it, it's like winning a prize. For years, Bacon and Egg Pie has been a classic Kiwi favourite. Home-made individual bacon and egg pies, baked in patty tins or as a whole pie, make a very good and easily transportable picnic dish.

Instructions to make Bacon and egg pie:
  1. Grease a deep dish with oil or butter and lay out your pastry puff sheets. Cook until golden and puffed.
  2. Dice up bacon in oil in fry pan and cook until to your liking and take off the heat.
  3. Whip up your eggs, add salt and pepper, cheese, pasta (optional), bacon, zucchini and stir. Add milk.
  4. Pour your egg / bacon mixture on to pastry puff sheets and cook in a moderate oven.
  5. Slice up any toppings you like..i use mushrooms, tomatoes, onions and and fry lightly in fry pan until soft.
  6. Once egg mixture on the pastry is nice and firm..i add the toppings (mushrooms, onions and tomatoes on top of egg / bacon evenly and sprinkle dried garlic and mixed herbs on top. I place back into oven until topping looks just to your liking.
  7. Add chips / fries or a fresh salad in the side.

Alternatively, they are nice served warm after the picnic if the weather wasn't up to scratch. This is my mum's, so the BEST pie ever! It is fantastic served with ketchup and in my opinion is probably better cold. Chop the parsley (one whole packet). Mix the parsley and bacon in with the egg mixture.
