  1. to clean /wash the pork shoulder take limes and sour oranges and squezze the juices and set the juices aside in a bowl.
  2. in a large bowl put the pork shoulder and the sour oranges and limes w/o the juices. and add cold water and salt
  3. leave it under salt/water and oranges, limes for an hr
  4. in the bowl with the juices of the limes and oranges add onion, salt, garlic, oregano and mix and set aside
  5. after an hr that the pork has been in the salt/water bowl take it out rinse it and poke wholes over it and add the seasoning you made earlier
  6. leave it in the fridge overnight (optional).
  7. bake 375°F covered for 4-5 hrs and uncovered for another 2 hrs
  8. if you want to make 2 just double the seasoning.
