  3. Pile all the vegs and the herbs into the middle of a roasting dish and drizzle eith olive oil
  4. Place the beef on top of the veggies and drizzle with olive oil.
  5. Place in oven and immediately lower the oven temperature to 200ºC.
  6. Cook for 30min.
  7. Add veggies at this point if desired (I added potatos and trunips).
  8. Add a couple of dashes of white wine and cook for another 45min.
  9. check on your roast occasionally and baste and mix veggies if needed
  10. Jamie Oliver recommends letting roast rest at room temperature for 15min before serving. Covered with tin foil snd a tea towel.
