- Make ready 1 kg Mutton(cut in pieces)cleaned and washed well

- Make ready 6 small cinnamon sticks
- Take 6 cloves
- Get 6 cardamoms brown/green
- Get 2 tsp caraway seeds
- Make ready 1 kg basmati rice
- Prepare 5-6 green chillies vertically slit
- Take As required water for boiling
- Get 1 kg basmati rice
- Take 2 tbsp chopped mint leaves
- Prepare 1 big tomato(sliced)
- Get 3-4 tbsp deep fried onions
- Prepare 3 tbsp lemon extracted juice
- Get 1/4 cup saffron flavored milk(2 saffron strands dipped in milk)
- Take 1/2 tsp pineapple essence and Few drops rosewater
Steps to make Mutton Dum Biryani:
- Marinade Mutton pieces in Yogurt, ginger paste, garlic paste, chilli powder, salt and garam masala for 2 hours.
- Cut onions in thin slices.
- Heat oil in cooker and put whole garam masalas.
- Put onions and fry till golden brown in colour.
- Add 3 green chillies.
- Add ginger garlic paste and saute till raw smells goes.
- Add chopped tomatoes and coriander leaves.
- Add biryani masala, chilli powder, turmeric powder, garam masala powder and mix well.
- Add marinated mutton pieces and cook till Mutton will done.
- No need to add water. After cook mutton strain oil from meat and keep aside.
- Fry some thin onion slices till brown in colour for biryani.
- Fry washed and drained rice in remaining oil. Add water, salt and lemon juice.
- Cook till rice will semi done.
- Grease a big and heavy bottomed pan.
- Make layers from cooked mutton and cooked rice in pan.
- Make a hole in middle of layers. Put remaining oil of mutton in hole.
- Garnish with fried onions, coriander leaves, mint leaves, sliced tomatoes and fried green chillies.
- Sprinkle rose water. Pour saffron milk and pineapple essence over rice.
- Seal the lid with atta dough and keep on low flame for 10 minutes.
- After 10 minutes open the lid.
- Transfer in serving plate and Garnish with fried onions, fried cashews and fried raisins.
- Enjoy delicious mutton dum biryani with raita and salad.
