The ingredients needed to make Sig's Guacamole:
  1. Get 1/2 red onion,finely chopped
  2. Get 2 fresh chillies ,I use one red ,one green,finely chopped
  3. Make ready 1 clove of smoked garlic, chopped very finely
  4. Make ready 3 Hass avovados ( only use good quality avocados)
  5. Prepare 1 juice of 2 limes
  6. Get 1 1/2 tsp sea salt ,or salt substitute
  7. Prepare 1 handful of chopped coriander
  8. Take 1 pinch fresh ground black pepper
  9. Prepare 1 very ripe tomato,deseeded and diced
  10. Take 1 pomegranate (optional) seeds
Steps to make Sig's Guacamole:
  1. put a quarter of the onion and half the chilli in a pestle and mortar and mash to a rough paste.Scoop the flesh from advocado and the garlic into a bowl ,if you have a small mortar
  2. roughly mash the flesh with fork and lime juice as you go along, then poor im rest of lime juice ,onion ,chilli and coriander .Season with salt and pepper .Add the tomato and stir .Serve with tortilla chips.
  3. For a special treat , leave out tomato and add pomegranate seeds instead.
