Thandai is an Indian cold drink prepared with a mixture of almonds, fennel seeds, watermelon kernels, rose petals, pepper, vetiver seeds, cardamom, saffron, milk and sugar. It is native to India and is often associated with the Maha Shivaratri and Holi or Holla mahalla festival. Thandai is a very refreshing spicy cold drink with aromatic flavors; main ingredients are almond, milk, sugar and some spices.

- Soak almonds,black pepper,fennel seeds,khus-khus in warm water for 2 hrs.

- Dissolve the saffron in little warm water.
- Mix all the ingredients and grind to fine paste using rose water.
- Keep paste aside for later use.
- Dissolve agar-agar in 1/2 Cup of water and bring to boil.
- In another pan boil milk with sugar.
- Add agar-agar mixture to milk.
- Now add thandai paste to milk and agar -agar mixture.
- Keep aside to cool down.
- Meanwhile whisk the cream till soft peaks formed and fold it into milk mixture.
- Pour into serving glasses and refrigerated for 4-6hrs or till the souffle sets.
- Served chilled,garnished with sliced almonds and few strands of saffron.
