  4. Get 2 large soft tortilla wrap, of preference
  5. Get 2 handful of mixed or other lettuce/salad leaves

Using a blender or a food processor, pulse the cauliflower until you get a texture finer than rice. Place the steamed cauliflower in a dish towel and squeeze out as much excess water as you can. You might want to let it cool for a few minutes first, so you don't burn yourself. Cauli-wraps are another superb "fake carb" for which we owe thanks to the cauliflower.

Steps to make Sig's Cauliflower Wrap:
  1. Mash up or blend the cauliflower or other vegetable, with 1 tablespoon of the mayonnaise , into a either a slight rough puree or make it very smooth
  2. Add all the spices as mentioned as using one pinch each, and then add another 1-2 tablespoons of mayonnaise, as to your liking.
  3. Spread the wraps with the remaining mayonnaise and top with the lettuce /salad leaves
  4. top this with pureed vegetable mix and wrap , serve and enjoy
  5. You can add tomatoes, hardboiled eggs, salmon, or anything else you would like to eat with this curry flavoured dish.

They won't keep as long as a standard tortilla so you'll want to freeze them and defrost as needed. In any blender, add eggs, cauliflower florets, arrowroot, salt, garlic, olive oil, and water. Blend well until cauliflower is liquefied and batter is smooth. Stir it in by hand so it remains in large pieces. The coconut adds texture and helps hold the wrap together as it cooks.
