Since they are a bit labor intensive. To test if the oil is hot enough, add a tiny piece of dough to the oil and if it bubbles and floats on the surface, your oil is ready for frying. Add the samosas to the oil making sure not to overcrowd the pan, and reduce the flame to a simmer. Fry the samosas on a low flame till golden brown on either side.

Instructions to make Half samosa:
  1. In a bowl mix all together Maida,salt and oil nicely with help of your finger tips,the flour should be well mixed with oil.This is done to get crispy samosas
  2. Then add little little water at a time and make a stiff dough.
  3. Cover it with samp cloth(to prevent it from drying) and let the dough rest for 20 minutes,meanwhile prepare the stufffing.
  4. Heat oil in a pan add jeera,boiled potato,peas and saute,now add red chilli powder,salt and garam masala powder and amchur powder and mix it nicely.keep aside for cooling.
  5. Now take a small piece from a dough and roll it like a puri and put some filling in between and roll it like a spring roll till end cover both side from end with hands.
  6. Now cut small pieces from roll by knife,take one pieces and press flat with your pam make all like that.
  7. Now fry these pieces on low to high flame till light brown.
  8. Serve with your favourate sauce or dip

Mix and then add ghee and start kneading by adding a little water at a time. Ensure that you add water gradually and make a firm dough. A soft dough will not make your samosas crispy. Cover the dough with a damp muslin cloth and keep aside for about half an hour. Dampen edges and form semicircles into cones.
