Steps to make Khandeshi vangyache bharit with smoke:
  1. Cut the spring onion bulbs and Greens finely and keep seperate.meanwhile apply oil to whole brinjal and roast on gas flame directly. When done cover in a Pot for 2 mins. Remove cover and mash it properly.
  2. Groundnuts should be roasted and crushed coarsely
  3. Crush ginger garlic chillies coarsely
  4. In a pan add oil Give tadka of cumin curry leaves and hing. Stirr continuesly
  5. Add crushed ginger garlic and chillies. stirr add chopped coriander stirr continuesly. Add coarsely ground nuts and grated coconut. Stirr.
  6. Add spring onion bulbs chopped and stirr. Add. Salt let it cook for 2-3 mins. Add roasted and mashed brinjal.mix properly and cover for 2-3 mins.
  7. Add greens of spring onion and mix. Let it cook for 1 more mins. Add lemon if you like it. Remove in a serving bowl for smake
  8. For smoke: : place the small steel cup in the middle of baingan bharta. Put burnt coal in that cup pour spoonful of oil over coal and cover. Let the smoke spread over all dish.
