  1. Add the ◇ bread flour and cake flour to a bowl. Add 1 cm cubed cold butter and mix with your fingers until crumbly.
  2. After the batter becomes pretty crumbly and mixed together, form a well in the center and pour in the cold water.
  3. Use the palm of your hand to gather it all together. Wrap it tightly and rest in the refrigerator for 1 hour or more.
  4. Dust a working space with flour and use a rolling pin to roll out the dough from Step 3 to a thickness of 1 cm.

  9. As seen in the image, use a cake fork with thin tines to secure the two pieces together.
  10. Spread a sheet of aluminum foil onto the baking tray and line up the pies. Brush on of the same "glue" made from a wash (egg yolk mixed with water), and top with a sprinkling of granulated sugar. Bake for 10-15 minutes on the middle rack at 230ºC.
